What we work on
We look at how work moves through the kitchen, starting with purchasing and receiving. That includes storage, preparation, cooking, service and cleaning. We review production schedules and station responsibilities, paying attention to delays, duplicated work and difficult handovers.
In a restaurant, the kitchen has to keep pace with service. Catering also needs batch planning, packing and dispatch. We review these demands against the space, equipment and people available, then recommend changes the team can put into use.
Daily routines also need food safety controls. We review hygiene, cleaning, separation of raw and ready-to-eat food, and the checks recorded during production. HACCP, allergen control and SOP development can form part of the assignment.

What we need from you
Current menus, production schedules, service volumes and kitchen layouts are a useful start. We also need time with the people doing the work and access to the relevant service periods. Include existing food safety procedures and monitoring records where relevant.

Can you work with an existing kitchen?
Yes. We start by observing how it works. The recommendations distinguish changes you can make now from those that need investment or additional capacity.
Does this include purchasing and logistics?
The purchasing, storage and logistics service covers supplier decisions, ordering, stock movements and dispatch. We can include it in the same assignment when those issues affect the kitchen.
Can you help select or replace equipment?
